Steakhouse Pork Sliders with Peppered Bacon Jam

  • 1 Smithfield® Steakhouse Seasoned Pork Tenderloin
  • 6 slices Smithfield® Peppered Bacon, cut into 1-inch pieces
  • 3 medium sweet yellow onions, thinly sliced
  • 1/2 cup brown sugar
  • 1/4 cup strong brewed coffee
  • 2 tablespoons cider vinegar
  • 10 small soft dinner rolls
  • 1 cup watercress or arugula, washed


  1. Heat oven to 425°F. Place pork on rack in shallow roasting pan. Roast 25 to 30 minutes per pound until internal temperature reaches 145°F. Let stand 10 minutes before cutting into 1/4-inch thick slices
  2. Meanwhile, cook bacon in large skillet over medium-high heat until browned and crisp; drain. Carefully remove all but 2 tablespoons bacon grease from skillet.
  3. Cook onions in bacon grease over medium-high heat until very tender and golden brown, stirring occasionally, about 10 minutes. Stir in sugar, coffee, and vinegar; mix well and bring to a boil. Stir in bacon. Boil, stirring frequently, until liquid is syrupy and reduced to a few tablespoons. Salt to taste.
  4. To assemble sliders, spoon bacon jam onto bottom half of rolls. Top with 2 slices tenderloin and watercress.
