Skillet Teriyaki Pork and Nutty Rice

  • 1 Smithfield® Sweet Teriyaki Pork Tenderloin, cut into 3/4-inch cubes
  • 3/4 cup dry roasted peanuts
  • 1 tablespoon toasted sesame oil, divided
  • 1 (8.8-oz.) package ready to serve multi-grain medley (2 individual cups in package)
  • 1/2 cup dried cranberries
  • 1 tablespoon sugar
  • 1 1/2 teaspoons grated orange zest
  • 1/8 to 1/4 teaspoon dried red pepper flakes
  • 1/4 cup chopped green onions


  1. Heat a large skillet over medium-high, add peanuts and cook 2 minutes or until beginning to lightly brown, stirring frequently. Set aside on a plate.
  2. Heat 2 teaspoons sesame oil in skillet over medium-high heat, cook pork for 8 to 10 minutes or until browned and done. Return peanuts to skillet.
  3. Cook rice in microwave according to package directions. When done, stir into the pork and peanuts along with cranberries, sugar, orange zest, pepper flakes and remaining 1 teaspoon oil. Cook 1 minute to heat through. Toss with green onions. Salt and pepper to taste.
