Pork Penne Pasta Salad

  • 1/2 the Smithfield® Slow Smoked Mesquite Flavor Loin Filet and vegetables (reserved from the "Grilled Pork & Veggies with Lemon" recipe)
  • 6 oz. uncooked penne pasta
  • 8 oz. goat cheese, cut or crumbled into 1/2-inch pieces
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 2 cloves garlic, minced


  1. Cook pasta according to package directions; drain. Rinse with cold water to chill; drain.
  2. Combine pasta, pork loin filet and vegetables leftover from the "Grill Pork & Veggies with Lemon" recipe, goat cheese, olive oil, vinegar and garlic. Toss until well combined. Salt and pepper to taste if desired.
