Grilled Pork and Corn Main Salad

  • 1 Smithfield® Slow Roasted Golden Rotisserie Flavor Pork Tenderloin and corn-basil relish (reserved from Grilled Pork with Corn-Basil Relish recipe)
  • 1 (15-oz.) can black beans, rinsed and drained
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • 2 ripe medium avocados, chopped


  1. Coarsely chop pork tenderloin reserved from the Grilled Pork with Corn-Basil Relish recipe; combine with the reserved corn-basil relish in large bowl.
  2. Stir in beans, onion, cilantro, lime juice and olive oil; mix well.
  3. Gently fold in avocados. Salt and pepper to taste. If desired, serve with additional lime wedges to squeeze over at serving.
