Garlic & Herb Sirloin Steaks with Grilled Sweet Potato Salsa

  • 1 Smithfield® Roasted Garlic & Herb Pork Sirloin
  • 1 fresh pineapple, peeled, cored and sliced into ½-inch thick rings
  • 1 sweet potato, peeled and cut into ¼-inch thick slices
  • 1 (15-oz.) can black beans, rinsed and drained
  • 1 lime, juiced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons chopped red onion
  • Salt
  • Pepper


  1. Heat charcoal or gas grill to about 375°F. Grill pineapple and sweet potato slices until char marks have formed on each side, about 5 minutes. Remove and let cool.
  2. Dice cooled grilled pineapple and sweet potato and place in large bowl. Add beans, lime juice, cilantro and onion; mix until evenly distributed. Season with salt and pepper to taste. Refrigerate until ready to serve.
  3. Cut sirloin into 1-inch thick slices to make sirloin steaks. Grill 6 to 8 minutes per side until internal temperature reaches 145°F to 160°F.
  4. Remove steaks from grill and serve immediately with grilled sweet potato salsa.
